A good Chicken dinner can be really healthy but watch out for that tasty skin which is full of flavour, but also full of fat. But if you take it off before cooking it will leave the breast dry and chewy. Try small slices of zest of lemon placed under the skin as this will infuse the breast giving tons of flavour. We all know Sunday lunch is all about the gravy, but once again this can be filled with fat from the meat, but fear not we don’t have to lose the gravy just invest in a gravy separator, they’re about £4.50 from Amazon, this will get rid of all your unwanted fat in your meat juices. Bring to boil with a drop of Red Wine and some stock from your veg for an equally tasty healthy gravy. Now down to the veg! I have no idea what’s wrong with kids of today, if your kids are like mine they just turn their nose up at any thought of putting veg on their plate never mind their mouth. When I was a young lad we were brought up on the stuff as meat was an expensive commodity especially when there were six lads in the house. Anyway back to the lunch, plenty of fresh veg is in order and try make sure you fill half the plate with veg, the other half chicken or any lean meat. Roasties can be again tasty and healthy. Cut potatoes into large chunks leaving the skin on is optional, boil chunks in water until fluffy. Drain off the water mix up 1tsp of Marmite and 2tsp of water add to potatoes and toss, spray gently with oil and lay out in a baking tray, cook at 210c/425f/Gas 7 turning occasionally until golden and crisp. For dessert try a cooked apple filled with dry fruit and low fat flavoured yoghurt.
